Product Description
India Arabica Monsooned Malabar AA comes from various smallholder farmers across the Malabar Coast in South-West India, where coffee has been shaped by the sea for centuries. Back in the days of wooden freight sailboats, coffee shipped to Europe was stowed below deck in humid, hot, leaky conditions, exposed to heavy monsoon winds sweeping across the south-western Indian sub-continent. Today, monsooning is a purposive, controlled, and labor-intensive process: sun-dried cherry coffees are spread in ventilated warehouses, where moisture-laden monsoon winds from June to September circulate around the beans through opened sidewalls. Over 12 to 16 weeks, the beans swell to double their size, lose density, and transform from green to pale gold, developing a unique cup profile. They are raked and turned by hand several times daily for uniform exposure, then carefully polished, graded, and color sorted for export.
