Product Description
Capricornio is a network between 20 farmers from 5 different regions in south of São Paulo and Paraná, run by Luiz Saldanha. In the 1960s this area was well known for its coffee production but which sadly took a different turn due to climate change and the increasing coffee production in the north. However, the climate changed once again and Capricornio saw its potential of the region and decided to put it back on the map with not only ecologically sustainable farms, gender equality and a production of high quality, but astonishing coffee profiles with complexity for specialty coffee. The regions low altitude makes the cherries undergo a larger amount of stress during its development time, which makes the fruit grow big alongside a slower riping period, a process similar to cherries grown on higher altitudes.
VARIETAL: Yellow and Red Catuai, Red and Yellow Bourbon, Obata, Topázio, Arara, Red Icatu, Grape (IAC 125), Acaiá, Ouro Verde, IAPAR and Mundo Novo.
ALTITUDE: 450 - 1,200 meters.
PROCESS: Honey
FLAVOUR: Dry fruit, nougat with pecan and dark chocolate.
REGION: South of São Paulo and Paraná states.
